Lemon Yoghurt Muffins

Muffins you can enjoy and not feel guilty

 Ingredients:

1 cup low fat natural yoghurt
¼ cup honey or pure maple syrup
50g (1.5oz) butter
½ cup low fat milk
2 eggs
2tsp. lemon rind
¼ cup lemon juice
1 ½ cups white flour
1 ½ cups wholemeal flour
2tsp. baking powder
1tsp. baking soda

Method:
Pre heat oven to 180 C
Gently melt the honey or syrup and butter together in a small pan and set aside to cool
Beat together the eggs, yoghurt, milk and rind
Add lemon juice to honey/syrup and butter mixture
Combine flours and baking powder and soda
Add all the liquid ingredients to the dry ingredients and mix until combined
Spoon into greased muffin trays and bake for 20 minutes
