GOOD FOOD - TRY THIS


SALMON PIZZA

Ingredients
  • 200g low-fat ricotta
  • ¼ cup low-fat plain yoghurt
  • 1 prepared wholemeal pizza base
  • 1 punnet cherry tomatoes, halved
  • ¼ cup snipped chives
  • 100g smoked salmon, cut into strips
  • 10g baby rocket leaves (about 30 leaves)
  • 1 tablespoon green peppercorns, drained

Instructions
  1. Preheat the oven to 230°C (210°C fan-forced).
  2. Combine the ricotta and yoghurt in a bowl and whisk with a fork until smooth. Spread on the prepared pizza base and scatter with the tomatoes and chives. Bake 15 minutes, or until the crust is crisp and golden. Remove from the oven and cool on a wire rack for 5 minutes.
  3. Drape the salmon over the pizza and top with the baby rocket. Sprinkle with the green peppercorns. Serve immediately.
The sky’s the limit when it comes to healthy pizza toppings. Try roast potato or pumpkin, capsicum, mushrooms, shallots, lean ham or barbecued chicken without skin.
